East Wind in Wading River announces the appointment of Todd Sabatini as Chef de Cuisine of Desmond's Restaurant. He uses fresh and seasonal Long Island bounty whenever possible and values North Fork wines for his reductions and demi-glaces. His additions to the Desmond's menu include Tuscan rib-eye with sun dried tomatoes and black olives with garlic mascarpone cream, grilled chicken and wild mushroom linguini with baby spinach, tomatoes and roasted garlic in a light Sauvignon Blanc sauce, prosciutto-wrapped shrimp with grilled Tuscan bread and lemon caper beurre blanc and snipped chives and a seafood medley of lobster, shrimp, scallops, mussels and clams with garlic cream sauce. The Plaza Cafe in Southampton will be hosting a Capiaux (CA) Vintner Wine Dinner on Sunday, August 12 at 6 p.m. The cost of the dinner is $150 per person. The menu is as follows: The Plaza Cafe signature Canapes paired with Schneider Cabernet Franc, Catapano Farms goat cheese ravioli with baby local heirloom beets paired with Capiaux 'Chimera' Pinot Noir 2005, sauteed sea scallops with local lobster and sweet corn paired with Capiaux 'Widdoes' Pinot Noir 2005, five spiced tuna with smoked corn salsa and avocado puree paired with Capiaux 'Garys' Vineyard' Pinot Noir 2005, sliced Naturewell sirloin with truffled macaroni and cheese and red wine reduction paired with O' Shaughnessy Cabernet Sauvignon 2004 and for dessert peaches served three ways. The Country House Restaurant in Stony Brook offers a prix fixe brunch which is served daily from 12 to 3 p.m. Dinner is served daily from 4 p.m. Monday through Thursday a $36 dinner prix fixe is available. Menu items include twin fresh roasted duck breast, broiled trio of South African lobster tails, fresh grilled Dijon chicken, herb crusted baby lamb chops and sauteed sweet sea scallops. The Pridwin Beach Hotel & Cottages in Shelter Island celebrates summer Sundays with reggae on the lawn through September 2 from 2 to 6 p.m. featuring a super mix by King Crown International. John's Restaurant in Hampton Bays offers a menu of Italian delicacies plus an evening board of specials. Choose from pasta, focaccia panini and wide variety of wines by the glass.
